Coffee Fridge Cookies

Coffee flavor in a cookie.  Mm mm, mmmmm!  My mouth is watering.

Ingredients:
2 teaspoons of Instant Coffee
1 teaspoon of hot coffee ( I spared it from my cup!)
1 teaspoon of vanilla extract
1/2 cup of butter (1 stick), room temperature
3/4 cup firmly packed brown sugar
1 egg
1 1/2 cup of Flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon of cinnamon
1/3 cup of chocolate dessert sprinkles

Dissolve instant coffee into hot coffee, add vanilla to the mix too.  Mix butter, brown sugar, egg and coffee mixture in large bowl with an electric mixer until light and fluffy.  In a separate bowl, mix flour, baking powder, salt and cinnamon.  Add the dry flour mixture to the egg/sugar mixture and blend until combined.

Divide the dough into two parts.  Shape each half into a 6-7 inch roll.  Roll in the chocolate dessert sprinkles.  Then wrap in plastic wrap and refrigerate for 2 hours.

Cut rolls into 1/4 inch slices.  Place on an ungreased baking sheet about 1 inch apart.  Bake at 375 degrees for 6 to 8 minutes, or until firmed.   Cool on a rack.

Makes about 3 dozen cookies.
