No Grit Cornbread
I know, I've really neglected my blog lately. I was so enjoying making crafting and cooking. But, another chapter has come..... I've gotten a job! It's temporary, but every bit helps when you have mouths to feed!
Anyways, now that I've come up with a pathetic excuse for not doing what I enjoy...... (sigh).
I thought I'd share a recipe I've made twice within the past week....
Cornbread! Just some non-fancy food that is so good and comforting! Today, while the heartland of Indiana is getting a dowsing of ice and snow, comfort food hits the spot!
We enjoyed this cornbread tonight with some chicken-n-dumplings, but last week I made with some pinto beans and ham.
Ingredients:
1 cup of buttermilk (or the quick stuff like I use 1 tbls. of vinegar and then fill to the 1 cup with milk)
3/4 cup of yellow cornmeal
1 1/2 cup flour
2 tsp of baking powder
1/4 cup sugar
1/4 tsp kosher salt
1 beaten egg
3/4 cup of vegetable oil
Preheat oven to 400 degrees.
Soak the cornmeal in the buttermilk. Sit aside for 20 to 30 minutes.
Heat an Iron Skillet on the stove top, and add 1/4 cup of oil. Then turn off the heat.
Combine flour, baking powder, sugar, and salt. Add in cornmeal/milk mixture, egg, and the 1/2 cup of oil. Combine ingredients until just combined and not lumpy. (yep, I said it!) Pour the mixture into the skillet, and spread evenly. Place in the oven for 25 minutes.
Once it comes out, let cool for 5 minutes. Then cut and serve. The buttermilk does something magical to get rid of the gritiness and adds more moisture and fluff to the bread.
Sorry, This is the one piece left! We ate it before I even thought to take a pic!

"Sea Salt Carmels" an easy and quick candy
Question.....Can we get enough baking and candy making this time of the year? No, of course not!
But it seems that the "most wonderful time of the year" can also be the busiest. I've been racking my brain about what to give teachers this year, and still stick to our tight budget. There is a little chocolatier in Indianapolis that has some wonderful treats. My favorite is their sea salt carmel. So I set out to make some for gift giving to our childrens' teachers.
I used some premade carmels, easy and readily available! Melted some chocolate chips! I used semisweet, but milk chocolate would be good too! And some sea salt!
Place the carmel on a skewer or toothpick. Dip the carmel into the chocolate to cover.
Then, swirl the excess chocolate off.
Place on a piece of waxed paper, and add a small pinch of sea salt.
Let the chocolate harden at room temperature. Then box them up, and you're ready for giving. Merry Christmas!

Fabric Christmas Banner
Yeah! I finally got the tree, stockings, and manger put up yesterday! I feel like I've finally accomplished something! (...it's the little things that make may days!). Anyways, the stockings are not hung on the chimney with care; I can't possibly fit 9 stockings on our narrow mantle! I bought a couple stands last year to manage the task of holding our stockings, they work great! But, this leaves our mantle looking a bit bland. Well of course a banner would fix this issue. In November I made a Thanksgiving Banner from paper, but for my Merry Christmas Banner, I'm using red and green fabric.
Steps to create:

- Cut the banner pieces in the classic triangle shape with some pinking shears.
- Place and glue the triangles onto a piece a ribbon, alternating the colors.
- Glue Letters onto the triangles (I used my cutter to make the letters, but any letters would work. Including writing with markers, or even some glue and glitter!)
